Campus Food Waste

Izmir Institute of Technology outsources the campus’s food and dining services to a local catering company. The outsourcing contract includes monitoring and reporting food waste within the main university cafeteria and a specific work plan to reduce food waste. One measure to minimize total food waste is dynamically adjusting the amount of food prepared in the dining halls based on the daily demand. The total food waste generated on our campus is less than 1%. In addition, the leftovers are collected in clean containers and utilized as pet food. Oil waste is collected in specific bins periodically and removed from the campus through outsourcing. Our institution has also launched a pilot research project about converting raw food waste into compost fertilizers.
